My 7yo dd feels too (is too?) old for those fancy Shabbos anklets with ruffles, but not old enough for nude tights. What goes in between for Shabbos footwear? Also wondering to wear with a gown for wedding...

Knee socks is in between tights and short socks.
Under a gown she should wear whatever is comfortable, you can't really see.

I bought my ten year old short socks that don’t have ruffles. The Jewish stores sell dressy ones.

Shabbos knee socks. I usually get a plain solid color that coordinates with her shoes. That way she’s matching regardless of the outfit.

I would just buy a simple anklet (not fold over) without any design or ruffle. Condor makes very nice quality ones and in many different colors.

In Lakewood the girls wear Shabbos knee socks in that in-between stage. It is either a neutral type of color (like an oatmeal) or it matches the outfit. It is generally a finer knit than weekday socks, or it may have embellishments (like bows or rhinestones...) but doesn't always.
For example, with a white dress, DD was not wearing white socks - she was wearing the neutral colored socks. But she had a rose-gold outfit, and with that she wore rose-gold socks (the neutral colored socks would've clashed.)
This year she has graduated to stockings. Aah. Much easier.
Full disclosure: Her big sisters "educated" me on all the Hilchos Socks, none of which my hopelessly outdated self was aware of.
