Can anyone post some ideas for simple but delicious foods for the simanim that freezes well?

Leek patties, mini muffins, or kugel and cut up when you are ready to serve

Do the same for Swiss Chard

1 cup flour
1 tsp baking powder
3 Tbsp oil
1 egg
1 tsp salt
Dash of pepper
One leek chopped up (I think I usually add more)
Add enough soymilk to make a batter.
Fry like regular pancakes.

Thank you. Which part of leek is used? Is there a bug issue?

You use the middle part of leek. There is a big bug issue with leeks. Use the thrip cloth method for checking.

Thank you for the replies.
Do people find that cooked carrots taste okay after being frozen/heated again?

Yes. That's actually the first Siman I intend to make when I get my act together.

I second the pumpkin muffins (I bake them in mini muffin tins).

Instead of dates, which we don't love, I use Silan which is date syrup. I think I will make Silan salmon to have 2 Simanim in one. That type of thing should freeze as well.
