Does anyone know how to braid a 3-4 pound seuda challah for a simcha? I know how to do a six braid challah, but I'm worried about how difficult it will be with so much dough. I read somewhere that you're supposed to make it an 8 strand braid and then put a three strand braid on top. How do you do 8 strands??? Any ideas would be appreciated.

I would worry that it would be raw in the middle...

AFAIK, and eight-stranded challah is braided exactly the same way a six-stranded challah is.
I made challahs out of 5 lbs. flour. Make sure to bake them for long enough. They're delicious!

I'm sure that baking for simcha has its own special bracha!

Thanks for all the tips! I'm going to try an eight first and then maybe and eight with a three on top.

Does she make the six and the three and let them rise seperately and then put the three on top? That's what I read, but it sounds tricky.

When creating your masterpiece challah, make sure that you make an indentation with the side of your hand in the centre, press firmly, and then add you other 3 strand on top, as the challah rises slightly this will prevent the top section from slanting off to one side. An old baker told me this and it works wonderfully! Hope This helps!
