First boil the water, then add the rice, cover it, put on a timer for 10 minutes, take a peak, if you still see water let it got for another 3-4 minutes. let it cool before you mix! company you use might also make a difference I use Texmati, Good luck

I second you are over-cooking.
TASTE the rice/noodles a few minutes earlier than you do now. If it seems soft enough to you,
immediately remove from fire and rinse in cold running water.

I think mushy means too much water. Drain the pasta immediately after it’s done. Cook the rice exactly according to directions with no extra water and uncover lid to allow all water to be absorbed.

Thanks for all your help! I will try your tips. I probably am overcooking it. Usually I don't boil water. Maybe that could be too.

For pasta, fill pot 2/3rds up with water. Bring to a boil. Add in pasta. Cook for 13 minutes, mixing occasionally.
Drain in colander over the sink. Rinse with cold water.
For noodles (lokshen/egg noodles) cook for about 18-20 minutes.
For stovetop rice
1 cup Uncle Ben's long grain white rice
2 cups water
In a 3 quart pot, bring the water and rice to a boil. Then, reduce the heat to a *teeny tiny flame*, cover and simmer for 20 minutes. Do not peek! Don't worry if the flame doesn't seem high enough to simmer.
After 20 minutes, close the flame and remove the pot from the stove. Let stand, still covered without peeking, for 5 minutes until all the water is absorbed.
