I'm looking for simple easy Jewish books for beginner readers. Any ideas?

Sat on my Hat's a good one.
Check out the Step-by-Step Reading Series by Faigy Rosenberg and Esti Weiss (Israel Bookshop).
Also, I'd look at all the frum publishers and check out their early reading books. There's usually "a look inside" option.
