I want them knee length for Pesach, but then will want to last for summer. How much of a hem is enough? Girls ages 6 and down

More than 2 inches will look weird hemmed up. Usually you don't need more than an extra 1" for the season.

I hem to mid calf. Enough to cover the knees, but not so long that they can't run. I would worry about them tripping over a longer skirt.
Kids that age generally grow taller faster than they grow wider, so as long as the waist still fits, all you have to worry about is making sure the hem is long enough.
