Meringues are oil free.
Are you allowed baking chocolate?

I've got a great recipe for brownies made with almond butter. There is no oil in the recipe, but the almond butter probably includes a fair amount, so not at all fat free. And they have regular butter, so you would need a milchic oven.
I can post the recipe if it would be any help.

Recipe includes chocolate chips.
Is there any way to substitute with raw cocoa?
Thanks for the link watergirl!

Not looking for fat free. We just don't use any oils on Pesach when cooking and baking.
We don't use most dairy stuff either other than milk.
Thanks for trying to help though.

We use very little processed ingredients.
Raw cocoa is ok.
Potato starch, sugar and coffee are ok.

1 smashed banana can be used instead of every cup of oil (only for baking). For cooking use shmaltz. We don't use cocoa so I don't have any recipes though.

We have the same limitations!
Do you specifically want to make a chocolatey cake/cookie?
Thanks for the mashed banana tip, babyblue. I should try that.
We make nut cookies and add cocoa but they aren’t particularly chocolatey.
I have another cake recipe too. Will try to look it up and post

I tasted this by my sil and it was delicious. I tried making it the next year and I messed up the recipe so it was eh. (And it calls for tons of nuts which we shell ourselves so I’m not rushing to make it again.)
6 egg whites+ pinch of salt
Half cup sugar
1/3 c potato starch
4-5 heaping Tbsp cocoa
2 c ground nuts
1/2 c chopped nuts
Lightly beat egg whites with salt
Add rest of ingredients
Bake in 9x13. (I don’t have temp or time but it says don’t overtake. Lol)

Ripe avocado can be used instead of oil but not everyone appreciates the taste. I am okay with the taste but I do use oil.

6 eggs separated
3/4 c sugar
1 t vanilla (could sub with coffee)
5 T cocoa
Beat yolks sugar and vanilla. Fold in cocoa. Pete egg whites until soft peaks with remaining sugar. Fold into yolks. Bake for 15 minutes.
This is designed to be a jelly roll and bake for 15 minutes. But you could just make it as cakes or cupcakes.
Good moed!

I make 1-2-3 cookies, replacing the 3 c. of ground muts with coconut and adding cocoa...
(1 c. sugar, 2 eggs, 3 c. coconut. Form into balls and bake. When I'm half way through the batter, I add cocoa to the remaining batter.... so that I end up with coconut macaroons, and choc./coconut macaroons...
