Meat gunk in cholent 🤢

It doesn't sound like the cholent is staying hot enough and that's why you're getting gunk/scum at the top. I'm curious what brand crockpot.

In either case, cook it on high until it starts to bubble (can take a few hours) and then turn down to low. It usually doesn't need to cook up before, but in this case it sounds like it does.

Hamilton Beach oval user here.

It stays on low (not keep warm, not high) from beginning to end, and I dont get gunk.

Maybe OP puts in too much water so it doesnt cook enough.
