Mashed potatoes/knish kugel- idaho potatoes or yukon gold?

Which is better for mashed potatoes or doughless knish: Idaho or yukon gold ?

Also, can I substitute almond flour for the flour to make it less carb?

I use the small gold potatoes for everything nowadays. It’s a much softer creamier potato

Everything is personal preference but if more people answered I think you'd get a lot more Yukon golds. They are creamier and lend themselves to mashed potatoes and knishes much better.

In my kitchen Idahos are strictly for baked potatoes. Too dry and starchy.
