My husband just bought 5 pounds of pepper steak. How do I make pepper steak for פסח? I don't use many ingredients and have no idea what to do with it. Any suggestions?

Here's my go to recipe:
1 onion, sliced
1 package (about 1 lb.) pepper steak
1 green pepper, 1 red pepper, cut in strips
4 oz. canned mushrooms
1/4 c. onion soup mix
2 c. water
Lay onions on bottom of 9x13. Lay meat over onions, place peppers around meat. Drain and reserve liquid from mushrooms. Pour mushrooms over meat and veg. Sprinkle onion soup on top. Add water to reserved mushroom liquid to make 2 c. Pour over mix and cover. Bake at 350, 2 1/2 -3 hours.
If you don't use onion soup mix, you can saute onions, or better, try to dehydrate fresh minced onions, by lightly coating with oil and putting in a low oven for an hour or less (check). Use those with salt and pepper and you should get a nice oomph. A splash of red wine might be nice too though I've never tried it.
And you can skip mushrooms too. Put in other veg. like carrots.

equal amounts balsamic vinegar and brown sugar. cook on a low flame for a few hours until meat is soft
