the leather is scraped on the corners/armrests. Is this "to be expected" or did we just luck out?

If so you can file a claim

As someone who moved twice in the last 5 years and used 2 different movers, I would say it depends on what the damage is, its almost impossible to move without a scratch or two...

Did you sign a contract with them or make sure they had insurance?

Sorry for this.
You can learn from this experience. When I have moved, the movers have wrapped all of the major pieces in large sheets of cellophane so they can't get dirty, scratched or bruised while being moved.
Also for those moving, be sure of what you are insuring. Standard insurance for moves is by weight so if you are moving an expensive piece, you won't necessarily be able to collect actual value.

I'm in Israel as well - always get a contract. Any one who has moved will tell you this because it's so common here and people move soooo much.

How can we ensure that the contract protects us next time around?

Have a contract with the movers that stipulates that they must pay for any damages. Ask them if they have movers insurance - take pictures of furniture before, have a lawyer look through the contract and make sure it stipulates how they decide how much the damage is worth etc.
