Any tried and true recipes for a dietetic zucchini kugel or individual kugelettes?

I have my zucchinis but can't find my recipe!

(Maybe one with egg whites?)

2 Zucchini’s with peel
1 potato
2 eggs
1 cup seltzer
Spray oil
Salt and bp
Makes 3 servings

Shred zucchini, spray pan and sauté with onion and garlic until liquid has evaporated. Season very well with s&p. Cool, add egg whites and mix. Pour into greased pan and bake at 400 until top is set.
