I want to make it to put in a salad for day meal on shmini atzeres...what would be best way and not be tough?

I do London broil on the grill often.
I do just black pepper kosher salt rub with extra virgin olive oil. Let it sit for up to an hour.
If you want more flavor you can also add in meat spice rub from prima. But we like it better without.
I've done both imported and not imported. Absolutely delicious.
