I'm not sure you understand how hepatitis is spread. Covid also can not spread from one person to the next via eating off a plate that went through an industrial washing machine, even if there are bits of food still on it.
If the machines are not cleaning every bit of food off every item, which happens even in home washing machines, it's because the machine is being overloaded.

The army, dorms, mechinot etc all manage with real dishes. As do catering halls btw. |
And hospitals.

Not the same quality at all.
And the better ones are cheaper here. I actually shlppped some with me for pesach for family.
