Anyone know if I can freeze half a roll of gefilte fish? We’re a small family and I hate throwing it out. No one would eat it during the week so leftovers is not an option

I do it all the time. Bake a whole roll and freeze half for another week.

I freeze 1/2 a roll every other week.
To defrost, I cook it for 1/2 hour in spiced water.

I cook 2 rolls at a time, and we only use 2-4 slices per week.
I slice the rolls, and freeze 2 slices in a bag.
I'll put it in the fridge erev shabbos, so that it's defrosted for shabbos day.

If I bake it in the oven with the tomato sauce is it still gonna taste good after being frozen?

I don't see why not. You can defrost it in the oven.

I find that every time I defrost cooked fish, it’s very soggy…

That's why I don't let it defrost. I cook it in spiced water and it's delicious. No difference in taste or texture.

I do it all the time. Make sure it’s completely cooled off with no extra liquid to avoid sogginess. I slice it, wrap each slice individually with plastic wrap, put it all in a freezer bag and take out one slice a week.
