this. as well as very firm and they dont soften when you bake them.

I always make apple shtrudel and apple kugel with granny smith apples.
Comes out delicious!
And you can also simply eat them as they are

I cut them in slices and dip them in almond butter. It makes a great late night snack, when I'm tempted to eat something unhealthy instead.

They work very well in pie (which is made with sugar).
Not so much for applesauce (I use Cortland and cook until its own sugar comes out - no sugar added).

I use them (in combination with other apples) in pies and they come out very soft. Maybe because I slice very thin. I like the tartness, personally.
