In need of a good veggie dish

I need to make a side dish for shabbos. I was planning on an eggplant dish, but I just found out my guest doesn't eat eggplant, so I need suggestions. here's what I have in the house:

zucchini
yellow squash
spaghetti squash
mushrooms
tomatoes
onion
frozen broccoli and spinach
shallots
carrots
celery

any ideas would be appreciated. thanks!

garden skillet:

1 cup zukini diced
1 cup sliced carrots
1/2 cup chopped onion
1/4 cup margerine

melt marg, sautee veggies till tender add:

3 cups water
1/2 tsp dried basil leaves

bring to boil and add:


8 oz small pasta ( I use P&R ring shaped pasta)

cover and simmer 10 minutes or till pasta is tender

add salt and pepper to taste

serves 4-6

delish!!!

Fancy sweet squash:

- peel and cut in half
- scrape out seeds
- fill with chunks of apple (can add raisins too)
- sprinkle with cinnamon
- pour over some honey
- bake till squash is soft

grilled veggies. Cut all veggies into bite size pieces, mix with olive oil, salt, pepper, garlic powder, basil. Grill stirring frequently so they don't get completely burnt to a crisp.

thank you so much for your replies! hisorerus, that squash sounds delicious.

I lazied out and just made a zucchini kugel in the end, but I will definitely try some of these recipes when I have more energy!

I know it is a little to late but what I usually do is stir fry it quickly all your veg. besides your tomatos until it is tender but crispy then I add crushed garlic, soy sauce and egg noodles. mmm delicious and a good side dish with chicken or meat.

Make a tart shell and fill with various roasted or fried veggies--onion (or shallots or leeks or any comibnation), potatoes, sweet potatoes, winter or summer squash, tomato, celery, carrot (or parsnip, turnip or other root veggies), broccoli, mushrooms, peas, salt, pepper and whatever other seasonings you like and have on hand (rosemary, sage, tarragon, parsley, whatever). Bake for about 1/2 hour. Good hot or cold.

queen don't add tomatoes she just happened to write it but don't add that in I usually put in
bean sprouts
mushrooms
celery
carrots sliced thin
onions
some scallions at the end
baby corn
red, green, yellow peppers
and what ever else you want to add.

and mmm delicious since the egg noodles take up the taste of the veg. and the soy sauce.

Elise, don't you need to put something in to hold the vegs together so the whole thing doesn't fall apart when you cut it?

btw, after trying it, I definitely recommend the zucchini kugel recipe from S&S. it was a total hit.

I tried that recipe and it was a flop maybe here it doesn't work well. like a lot of those recipes in there that worked for me in america don't work for me now in israel don't understand why Rolling Eyes

I have an american oven that was brought in with our lift. how much different can squash, eggs, flour, and american spices taste already?

The flour in Israel is quite different than American flour. It makes a difference in lots of recipes.

there's no flour in it, just breadcrumbs. what I did though was use the flavored breadcurmbs and then put just a dash of salt in it instead of the whole teaspoon. it made it very flavorful.
