It's next to the regular purple chrain for gefilte fish and it is mixed with water. What is it for?

The purple one is horseradish and beets.
The white one has no beets and is used for marror.

It's marror but not strong. It has pesach vinegar. People use it sometimes instead of mustard in recipe with a little zing. Or to crust a roast, mixed with crushed garlic, coarse salt and oo.

The difference is that the purple one has beets. Some brands have added sugar or sweetener, but not all.

When recipes call for horseradish, people use that.

The thing is that most sold horseradish (purple or white) is boiled in addition to being shredded.
Obviously ask your own Rav, but we hold that marror- weather horseradish or lettuce has to be raw. So jarred would be a problem for using for marror.
Some people like the white horseradish on their fish. I know my Fil does.
