Other than Zucchini Potato. Should be light and using basic ingredients for my finicky eaters.

Leave out the chicken to keep it pareve. It's delicious.

A made a delicious mushrooms soup, not thr lightest soup tho.

We don’t like sweet soups so butternut, sweet potato and apple are out.


Mushroom and cauliflower suggestions look good.

Anyone else?

Onion soup. Use bais yaakov cookbook recipe + 1/3 cup rice + cup of pareve milk instead of a cup of water, blend, and add salt if you want.

I make this in instant pot so I'll post that too:
2 onions, sliced however you like, rounds, strips, etc
Oil or butter to grease pot
1 tbsp sugar
1/4 cup flour
2 tbsp onion soup mix
2 tsp salt
1/3-1/2 cup white rice
6 cups water
1 cup non dairy milk

Pot: saute onion on low heat for a long time until started to brown
Add dry ingredients and stir a minute
Add liquids slowly
Being to a boil then simmer 30-60 minutes
Blend (or not)

Instant pot:
Saute onion for 5 minutes or longer if you have time, until all separated
Add dry ingredients and stir a minute
Add water
Close and cook under pressure 23 minutes
Slow release
Add milk and blend (or not)

Taste and add salt if you want

Carrot ginger is one of my family's favorites. Can use coconut milk OR cashews OR potatoes as the "cream" base.

So don’t make them sweet. Add garlic, ginger or savory herbs and white wine. Leave out the apple for the carrot, can add miso or black garlic to make them more complex, or curry powder for a different flavor . Can add red lentils for more texture

I just made something like that.
Red lentils, carrots, onions, garlic and sweet potato with a touch of ginger and turmeric.
I enriched it with a drop of coconut milk.
Puree until smooth.

I also love savory and don't go for sweet, but butternut squash and carrot taste really good salty with that hint of natural sweetness.
