what would be a nice additional vegetable to add to a pepper salad? I just use red and yellow peppers and some toasted sesame oil and some sesame seeds. but I'd like another vegetable to jazz it up a little. any suggestions?

purple cabbage would look really pretty with those colors and the crunch matches the peppers

Mince fresh ginger + chopped scallions + minced garlic go well in sesame oil. You can saute those three a bit in some oil then toss them on the salad.

chick peas? I always put chick peas in but I dont make sesame style salad, more like a vinegary one

my pepper salad recipe calls for
4 kirby's cut in cilcles
1 purple onion, thin rings
1 red pepper
1 yellow pepper
1 green pepper
2 carrots, thin circles.
I sometimes substitut baby corn for the yellow pepper.
You can also add snap peas, mushrooms.....I never do

This may sound weird to you, but my pepper salad is red, yellow, and orange peppers (sliced thinly the ling way) and black olives cut in half. Its really colorful and pretty and always gets eate up. the olives contrast the sweetness of the peppers nicely. The dressing is mayo, sugar, vinegar, and minced garlic.
