We have some pretty strict rules that it seems a lot of others don't have.
Fleishigs both seudos. Fish should be served at the first but not at the second.
For men: no garlic all day. No spices and no bassar beheima (animal meat) at the 2nd seuda. Dh asked about kreplach (Yeshivish Rav) and was told that he could eat the soup they're cooked in but not the actual kreplach at the 2nd seuda.
All of Aseres yemay teshuva (some things extend until shemini atzeres): no nuts, sour, or bitter foods (I thnk this is pretty common but my family really misses their pickles and chrain) and no grapes or raisins.
The no grapes minhag comes from the vilna gaon but I don't know anyone else has it.

ETA menu:
1st seuda- challah, salmon, chicken soup with kreplach, honey roasted chicken, rice, string beans, raw veggies and fruit.
2nd seuda- challah, chicken soup with kreplach and kneidlach (for the men), baked chicken, roasted potatoes, roasted veggies, compote.
Honey cake, fruit, and veggies left out on trays for all day noshing.

Lunch - I’ll be at work and get home at four, so I’m having fish, rice, and veg - I meal prep so this is my lunch for a few days. My husband and kids will have whatever he makes them.
Seudas hamafsekes - challah rolls, leftover chicken soup from shabbos and kreplach from the Spring Valley box (from the store), potato kugel from shabbos, chicken from shabbos, and Gatorade. Dessert will be the Toronto kollel fasting pills. Yay.

First meal:
challah and dips
sweet cooked salmon and gefilte fish
chicken soup with kreplach
broiled chicken on the bone
potato kugel
ferfel
applesauce compote
honey cake
Second meal:
everything the same, minus fish and chicken will be from the soup

I'm in Israel and we got watermelon from the local supermarket. It seems like it'll be out of season soon, but still good.
Planning on eating that today, as well.

first meal will be that we wash on lunch. Challa rolls, veg soup, tuna or eggs
Second meal - challah and dips, chicken soup, no kreplech but I am making a big meat knish instead with the main course. Mashed potatoes, chicken, green beans, roasted cauliflower, honey cake, grapes, melon.
After fast - quiche, garlic topped challa rolls, salmon, salad.

My family also just has 1 seudah but my DH's family does 2.
The traditional minhag is also to have a full seudah after the fast and to light candles with the flame from havdalah.
As someone upthread mentioned, it is minhag Hagra not to eat grapes on Rosh Hashana because grapes was the fruit of the eitz hadas and we don't want to remind Hashem of Adam's sin. My family follows that minhag. It could be people extend it until after Yom Kippur.
Now for the food, lol!
1st Seudah:
Challah with honey, salad and fish
2nd Seudah:
Challah with honey, soup with kreplach, chicken and pasta, pound cake.
After the fast:
Challah with honey, cut up fruit, soup, chicken cutlets, cake
Everyone have an easy fast!

I see everyone is serving chicken before the fast. Is there a problem serving meat? Halachically? Fasting on meat? My family did chicken, but I followed a mentor that did meat.
