Sorbets without any sugar, made with just the fruit itself, no other ingredient. Best if the fruits are very ripe.

Pineapple
Mango
Kiwi

Slice and freeze. Blend with a bit of water, the least water possible. Or let the fruit pieces defrost slightly so you don't have to add any water at all for blending.

*Can be layered and served as slices
*Can be served as scoops
*sliced into squares and placed into nice tall martini cups for serving
*freeze in nice serving size molds and serve just one color at each meal
*Freeze in popsicle mold. You can then dip into chocolate and coat with nuts if you wish..

I guess I should define healthy-trying to avoid white sugar and minimal if no eggs.

I think its called Bat Hindas chocolate cake from this site.
It's excellent!

I make 3 layer coffee jello
If I eat the whole thing (it’s huge), impossible
It’s less than 200 calories
Made with non flavored gelatin, coffee, almond milk, vanilla and xylitol.

Bottom layer coffee with vanilla and xylitol
Middle layer -add almond milk
Top layer almond milk vanilla and xylitol

You could only make the plain coffee one and it would be only the xylitol calories

Great way to stay on trackwith your diet over YT and still have a treat

You could do different flavors
You could blend fruit and make a fruity jello as well

I don't eat gebroks. I love pesach baking and make lots of healthier desserts. Look for gluten free sites if you can.
1. Sorbet. Frozen fruit. Lemon and honey
2. Maple syrup meringues. These are my kid favorite. Only egg whites and maple syrup
3. Almond butter cookies with honey
4. Coconut macaroons. Coconut, egg whites, honey
5. Nut cakes with honey
6. Carob brownies with almond flour
7. Blueberry muffins. Honey and almond flour
8. Pesach kichel. Various toppings. Coconut sugar or skip sugar completely

I make some regular sugar brownies, chocolate cakes, marble cakes, sponge cakes, chocolate chip cookies. Etc

We do eat gebrochts but I find lots of amazing cake and cookie recipes that are based on potato starch.

We are also nut-free.

The vanilla cupcakes from Naomi Nachman are a huge hit, no gebrochts, no nuts, and really easy.

Brownies from kosher by design. No gebrochts, no nuts, one bowl easy and delicious.

There's a toll house cookie bar recipe I got from this site. Same as above. No gebrochts, no nuts, easy and yummy.

I make large round flattened meringues and serve with chopped fruit salad on top and top with nuts. Or you can make one very large meringue which is called a pavlova and top with fruit and nuts (optional) right before serving
If you like you can make a lemon or orange curd to serve along with it as well.
Chocolate mousse-I use my chometz recipe
Poached pears in wine
Or baked pears with nuts crumble

AFAIK, coconut oil is full of saturated fat. My go-to is olive oil.

This flourless cake is outrageously delicious. Dubbed "Floor Cake" in our house because of the one year I dropped it facedown on the dining room floor. We scooped it up, put it back to rights, and it was devoured.

Pesach Floor Cake (Flourless Chocolate Cake)

Preheat oven to 375


Cake
1 cup chocolate chips
1/2 cup margarine
3/4 cup sugar
1/8 tsp salt
1 to 2 tsps coffee powder
3 large eggs
1/2 cup cocoa

Glaze
1 cup chocolate chips
1/2 cup heavy cream (pareve frozen whip)

Melt chocolate and margarine in microwave.

Add sugar, salt, and coffee powder.

Add eggs and beat until smooth.

Add cocoa and mix to combine.

Spoon into an 8-inch round cake pan lined with wax paper and greased.

Bake for 25 minutes.

Let cool for 5 minutes and turn onto plate. Cool completely.

Melt chocolate and cream in microwave. Don't boil. Stir.

Spoon over cake and let drip down the sides.

Let set for several hours.

Here's another family favorite. I think I got this one off Imamother years ago. It's delicious.
And if you take the time to arrange the apple slices in concentric circles, it's beautiful as well.

Pesach Apple Cake

Preheat oven to 350

Topping
1/2 cup coarsely chopped walnuts or pecans.
3/4 cup sugar
1 T cinnamon (or combine with ginger and nutmeg)

Cake
6 eggs
1-1/2 cups sugar
2/3 cups vegetable oil
1-1/2 cups cake meal

5 apples cut into 1/4-inch-thick slices
1/3 c raisins

Beat eggs and add in sugar, 2 tablespoons at a time, until thick and foamy.

Add oil in a steady stream.

Stir in cake meal.

Pour 1/2 of mixture into greased pie plate.

Sprinkle 1/2 of the topping, 1/2 of the apples, and all the raisins.

Add remaining 1/2 of the mixture, remaining apples, and topping

Bake for 1 hr and 15 minutes, until sides pull away and top starts to caramelize.
