There's really no universal "sephardi".

I'm married to one type of sephardi. My friend recently got engaged to a sephardi and wanted some sephardi foods to cook for her chosson. I told her the names of dh'd favorite foods and her chosson had literally never heard of any of them because he's a different type of sephardi.

Having said that, I'm married to a persian and cook Persian foods. Pesach foods are basically the same. Other than cakes/cookies/desserts almost all my usual meals are fine for pesach .

I know, Im also married to sefardi and cook mixture of Buchari, pesian but always looking to try something new

Sushi salad. Rice, cooked salmon or kani, cucumber, avocado, mango (or any vegetables you want to put in!). With spicy mayo and sweet sauce.

You can literally make anything you make for shabbos,..... if you're Persian you can still make all types of rice and khoresht
If you're Syrian, you can still make all types of mechshi
You can make lachmagine and kibbeh with Matza meal

We do everything we usually make besides couscous. Lachmagene with potato starch dough or matzah meal.

Khoresht karafs, ghormeh sabzi, abgoosht all with tadig. Pretty much what I usually make on shabbat!
