I don't have time to make my regular 5lb recipe today but still want to make challah so 1st off does anyone know if it still counts as doing the mitzvah of shlissel challah if I won't be making 5 lb and therefore not making a bracha? And does anyone have a fast 6 cup challah recipe? There's one in the table for 2 cookbook but I've made it before and it never comes out good. So any other quick recipes I can whip up fast???

Mix 2 tbsp yeast in 1 c warm water with a bit of sugar.

Leave for 10-15 min.

Mix 1.5 kilo flour with 1 tbsp Salt.
Add 1 c. Sugar and 3/4 c. Oil.

Add the yeast mixture and then add 2 c. Warm water.

Its water challah so no eggs.
Its delicious.

Sorry I dont know how many cups flour it is but sure you can check it up.

Please check, you may need to take challa with or without a bracha on this.
1.5kg is a lot of flour.

It's only five minutes but for those who'll plead tldr (or listen), Rabbi Wasserman runs through some classic Jewish sources for this, at the end mentions there's a controversy, CYLOR.
