"Moroccan Cholent"

A few weeks back, I bought something called "Moroccan cholent" for eating on Friday for my family (from Aisle 9 in Jackson if anyone knows the food I'm talking about)

It was so good. I don't think it was actual Moroccan cholent (not sure what the right word is - dafina?) but it was basically an Ashkenazi cholent, plus chickpeas, and a really good slightly spicy flavor which I can't really describe.

Does anyone know which spices I would need to use to replicate it?

Its called dafina or chamin.
There are many different types.

I make everything separately in net bags- wheat, rice, meatloaf, beef, whole potatoes, garlic head, chickpeas

Spices are: paprika, turmeric, salt, pepper, cumin

Thanks! This was all mixed together though. Flavor probably had the spices you mentioned but definitely something else too..

What do you do so that the rice doesn't get mushy? And which bag do you use for rice?

this looks great!

poster above me- I dont like cooking in plastic bags I use the net bags people use for chicken soup bones. I dont know what they're called.
I use basmati rice and I put it on top right before shabbat and it doesnt get mushy

Do you put the rice in raw ? In a cheesecloth ( that’s what the net bag is called)

I dont know how to post a picture :/
The rice doesnt go through the holes- I put it in the cheesecloth with the spices mixed in and on top right before shabbat starts. rice is raw!

the same spice mix for everything- paprika, salt, turmeric, cumin, pepper, olive oil

I put everything in its separate cheesecloth, put in pot or crockpot with water
thats it

the meatloaf I wrap in foil separately
