And how would you defrost? Straight into oven or defrost first and then warm up?

Not sure but I just put a frozen pasta dish (with stir fried onions, not covered in a sauce) direct onto Shabbos warming tray & was good. Israeli pasta is really pasta, I think can gently (not to dry out) heat directly too.
