First night 'properly'.
Second night whatever's left over, we just bring to the table for whoever wants to have a taste.

My parents do both nights and ny husband only the first night. It felt strange but now I am used to it.

Same, I grew up with both nights, but it's a lot easier only having to prepare the simanim for the first night. Although my kids usually like to dip an apple in honey the second night.
