My single friend came over for Shabbos. She's Sephardi so I thought, great! I'll send her home with all the meat leftovers! turns out R Ovadiah Yosef holds not to eat meat during the whole 9 days. darn. so now I have these delicious burekas on my hands, and there are even enough so that if I can somehow salvage them I won't have to cook a main for next shabbos! so exciting! the problem is how to keep them good? can I freeze them? what will happen to them in the freezer? any advice is appreciated!

It's best to freeze them fresh. They do freeze well.

(By the way, Sepharadim eat meat on Rosh Chodesh Av, the first of the nine days but this year it was Shabbat so everybody did too.)

I would preheat the oven and reheat them while frozen.

You sure can! Just warm it up before eating so they will be crispy.
