Says 14 days in the fridge but can it still last 2.5 weeks later?

What kind of frosting? When I buy the canned one it lasts forever even opened unless it's not tightly closed

It should be shelf-stable so as long as it smell fine (the shortening can go rancid after too long) and the texture is what you want (sometimes it gets hard/crackly) it should be fine.

It doesn't have any sensitive ingredients--its sugar, shortening and a shelf-stable liquid. Refrigeration may affect the consistency and sometimes they get moisture from the fridge which can ruin it. It's meant to stay out of the fridge.
Icings with real butter in the buttercream are more sensitive to spoilage.
I've taken cake decorating classes and have heard this from authorities on the matter.

As long as it's refrigerated when opened, it's fine for weeks

Sugar is a natural preservative--hence jelly is called "preserves". It doesn't need refrigeration and it might absorb flavors from your fridge.
