Side dish for chicken dinner

Preferably a starch.
I'm low on ideas and keep making the same ones again and again.
Something that kids will like, not anything extravagant or hard work, or exotic flavors.
Some of my starch side dishes are: roast potatoes, couscous, rice, sesame noodles.

I do sheet pan sometimes and add broccoli cauliflower baby potatoes (usually red, but yesterday a mix of red gold and purple) sometimes add onions.

But otherwise baked potatoes or mashed potatoes (fried onions b4 and add) or rice and salad

One week the potatoes were blue (streaks if blue in it and a blue peel. But the purple is completely purple)

Going anon because I've been suggesting this a lot this week:

I make it even easier by skipping the frying pan. I put the orzo into the pan I plan on making it in with olive oil and some spices (S&P, onion and garlic powder) and I put that in the oven to "toast" while I heat up the chicken broth in a pot. When the broth is hot, I take the orzo out of the oven, give it a stir, add the broth, give another good stir, and kind of flatten out the orzo. Then evenly spread out the onions on top and put it back into the oven.

Homemade French fries, spaghetti with marinara sauce, pasta with garlic and oil, cold tri colored pasta salad, Spanish rice, rice with mushrooms and onions, onion rings, baked potatoes

Quinoa with rice half half
Bulgur with tomato base is really yum
Cauliflower dish
Tabbouleh
Cubed roasted sweet potatoes with olive oil until really soft
Cubed potatoes with frozen dill with/without frozen garlic, roasted in oven till very soft

How do you make the chicken broth? Is that the same as chicken soup?
