I made a batch of challa last night.
It rise about 2 hours. Then, instead of kneading it, I put the whole thing into the fridge.
Today, I removed it from the fridge at about 12. At 6 I decided to make the challa. It had not risen at all since I took it out. I started kneading it, but the dough was still cold to the touch.
What did I do wrong?
Should I have not let it rise last night?
How do you successfully refrigerate cgalla dough to bake the next day?

I actually did this today and googled it since I've never done it before.
They say to put it in the fridge before the first rise, right after kneading. It can stay in the fridge for up to 3 days, just make sure to punch it down every so often.
As for why it's not rising, it most likely needs to come to room temp first.

You need to let it come to room temperature. It takes 3-4 hours or longer.

I put it in the fridge overnight.
I took it out at 12 and waited 6 hours.
Not only did it not rise, it did not come to room temperature either.

You're not supposed to let it rise before you refrigerate or else it will over-rise and not taste good. In the fridge it does a slow rise overnight.
