The ultimate no-boil Lokshen Kugel

I've tried and failed at this a few times. Now sharing my tried and true no-boil Lokshen Kugel recipe!

1. Spread can of crushed pineapple (no need to drain) on bottom of 9x13 pan.

2. Pour bag of raw medium egg noodles over it.

3. In separate bowl, mix:
(amounts are approximate, this recipe is very forgiving)
6-8 eggs
1/2 cup oil
1 cup brown sugar (or white, you choose)
1 cup almond milk
1 tsp vanilla extract
1/2 tsp cinnamon

4. Add about 2 cups hot water to the bowl (I take from my urn) and mix.

5. Pour mixture over noodles.

6. Cover pan.

7. Bake (I usually do at 350) for about an hour.

Here is mine - it is a Yerushalmi Kugel - without cooking noodles separately:

Fry 1/2 c sugar in 1/2 cup oil in a pot, stirring until the sugar melts and turns brown.

Turn off fire.

Add 3 cups of boiling water - stand back - will spritz

Stir to remelt the sugar.

Add:

1 tsp salt

1/4 tsp black pepper - or to taste

1/4 - 1/2 c dark brown sugar

Stir to dissolve.

Add 12 oz of thin noodles.

Add 4 beaten eggs.

Pour into 9 x 13 pyrex glass and bake on 350 for one hour.

Do.you mean the kemach extra fine noodles or wider?

So cool!! Does this come out as one homogeneous kugel?

I use the medium egg noodles, but I imagine other ones would work too.

Yup! It's pretty sweet, so only good if your family likes that!
