Can I Refreeze? Was defrosting in my fridge since yesterday. Is fully defrosted but I realized I have to make dairy for dinner. Any ideas?

I would cook them first and then refreeze if needed, or serve them tomorrow.

Cook and refreeze or trash. Defrosted chicken should not be refrozen and it shouldn’t sit in your fridge too long either

You can use it tomorrow if you keep it in the fridge. If you don't want to do that then cook and freeze or use in a soup or dish and then freeze.

The USDA says if you defrosted in fridge its totally safe to refreeze.

It might be safe but refreshing will really degrade quality.
You can cook the chicken tomorrow or you can poach the chicken and make a lovely chicken salad

I wouldn't refreeze.
You can make a cream of chicken soup with diced chicken cutlets. You'll have a well stocked freezer.

Marinate it and use it tomorrow. The marinade will preserve it.

if its still very cold then I refreeze. if its completely defrosted then not

Cut into strips and marinade (I like using a recipe from Susie Fishbein's green KBD - the one for marinated chicken wontons - I just use the marinade recipe).
You can
1. use in a stir fry tomorrow (mushrooms, babycorn, pepper strips, zucchini, whatever you like) with pasta for a chicken lo mein.
2. You can freeze in the marinade too, and take out to use as above for a different time.
3. Or use in wonton wrappers - yum....either fry them for now/tomorrow, or freeze in wonton wrappers for another time.

Marinate it today, put back it fridge and make sure to cook it by tomorrow.

Thanks all I ended up taking all the random veggies I had and throwing it into a pot with the chicken and water. Smells great. I’ll mash up the soup and veggies later (no fleishig blender) and shreds the chicken and freeze
