Is your cake fully baked? It usually happens when it is slightly underbaked in the center.

The cake should spring back when touched, leaving no dents. This is the best way to check.

You can use a toothpick to check if you really need a diff method, but a knife will probably cause it to sink a bit.

Once baked, let it sit in the pan on a cooling rack. Wait before removing the cake to the rack directly.

it doesnt sound fully bake or you are not following the recipe correctly.
How do you check that it is fully baked?
is it all cake recipes or a specific recipe?

I check with a toothpick. I mostly happens on pesach but also during the year, like 30% will flop.
I want to bake a cake now but have zero tolerance for flops

It might be the pans or that they are being filled to high. It's so frustrating!

You can turn cake upside down to cool it to prevent it from sinking

Try checking with a knife all the way to the bottom instead of toothpick. Also check your oven if you have a thermometer

Pesach is very hard to get a good recipe that will always work out especially in a Pesach oven as you are not using flour.
I wouldn't associate Pesach flops with during the year.

During the year is it the same recipe majority of the time? Use timing in recipe for guidance as each oven differs.

I have this too. Even if the outer part of the cake is already overdone, and the middle is long coming out dry on a toothpick, it will still fall! Not sure if it's just my oven or what. It's been years.

Could be too much air in the batter. You might he over mixing. Take the pan and pick it up slightly and drop it down on the counter before baking to remove any air bubbles inside the batter.
