if you have the spice and spirit cookbook, I use their corn muffin recipe in a 9X13 pan

I make this recipe all the time:
1 cup all--purpose flour
1 cup cornmeal
1 tab. baking powder
1/4 cup canola oil
1/4 cup sugar
1/2 teas. salt
2 eggs
1 cup soy, rice or almond milk
Mix dry ingredients together. Lightly beat eggs and add milk and oil. Add dry ingredients. Bake at 350 in a greased nine inch cake pan for about 20 give or take a few minutes. Bread is done when the center is set.

KBD short on time has a recipe for orange cornbread, never tried it though

You can use any recipe you google, just substitute soy milk for the cows milk...
