Crudites and dip
Ingredients for s'mores: Graham squares, marshmallows, chocolate squares
Beef jerky, olives, pickles
Two bite brownies, chocolate chip cookies, milk box

Last year I did a veggie platter. I used baby carrots, olives, cucumber, peppers and cherry tomatoes and I put a mini Chummus from Costco. Aside from the fact that it had to be done last minute it really wasn't hard.
