I work full time and would love to do meal prep on Sunday for the week. Could everyone give recipe ideas that could be done on Sunday and eaten a few days later?

I typically would plan to do braises or stews which actually improve the next day or so when reheated.
I will deliberately make a double size of many dishes so that I can freeze and have a rolling stock of meals available.
You can prep veggies and keep them in good containers. I do that quite a bit with salad type of veggies so that I can add to a green salad easily by having stuff prepped to add.
In my opinion, dark meat chicken reheats better than white meat (breasts) so I would plan to make dishes with dark meat to use later in the week and eat white meat chicken that evening. Of course there are delicious dishes that actually are able to effectively use white meat chicken
Stir fries are not good unless eaten immediately but you could prep the veggies and slice the meat and even prepare the sauce as the actual stir fry is very fast to cook. I will splurge on frozen rice which just has to be microwaved.
Baked pasta dishes freeze well like lasagna although you generally need additional sauce because so much is absorbed when reheated.

Following.
Right now I do more prep + freeze raw, then pop into the oven about an hour before we eat. I freeze raw meatballs, chicken bits + rice + sauce (all raw, in the pan), arayas (I freeze them in the pitas, raw), fish patties, breaded shnitzel, etc.
I'd love to get more ideas.

Bread chicken or fish, freeze in layers, take out of freezer day of, bake on baking sheet
Meatballs with sauce or veggies, freeze, place in oven for 2 hours
Make lasagna, bake, freeze, take out day of and put in over for 1-2 hours
Make quinoa, add to salads
Cut up veggies, roast, add to salads
Make tuna fish, put in small containers, add to salads or as snack with veggies/crackers
Crockpot for morning of...
Meatballs and Rice with sauce
Mini hot dogs with rice
Duck sauce pulled chicken
Mushroom Barley Meat Soup/Stew
Split Pea Meat Soup

Literally everything. Maybe only schnitzel is best fresh but I do oven fried schnitzel and it’s perfectly fine reheated.
(I cook for the week on Sundays)

But IMO families of Full time working moms don’t demand fresh schnitzel dinners.

I was responding to the Literally everything comment. Even my dh doesn't like reheated food.

I’m sorry to be harsh, but If my husband had this attitude he’d be cooking his own meals. You’re killing your self to contribute to the parnassah (Which is his halachic requirement not yours) and he demands fresh food. Oh, hellz no.

I cut raw veggies 1x a week using an alligator chopper
The trick is
1. Keep veggies in seperate container
2. Put 3 pieces of folded bounty on the bottom of the container
3. Change out the paper every 2-3 days
The veggies last more than 1 week
Pepper all colors seperate
Cucumbers
Red onion - I keep in a ziplock so the container doesn’t get stinky
Tomato remove liquid seeds
If I can’t use them on time I freeze the veggies to use for Matbucha or sautéed Chop meat
I love having sautéed chop meat in the freezer to use for beefaroni,meat lasagna, tacos
also good for empanadas or just on top of rice or mashed potatoes
Recipe- Sautée veggies optional
Onion
Peppers
Green olives
Raisins it gives a nice flavor
Sautée tomato sauce
Season the sauce well
Then add beef and cook chopping up until just done- don’t over cook
I’ll make 4 batches and store it on n gallon size freezer bag
The flatter you store it the faster it defrosts
Pre-season raw chicken so all you have to do is defrost and put in the oven - or put in the oven frozen longer
Pre bread cutlets
Meatballs
Lasagna
Soups all types
Spinach kugel - I keep it parve and add a cheese topping last minute if I want it for dairy - Munster cheese and beaten egg spread on to
Tuna or Salmon patties
When my kids were little I had a rotation
More or less
Mondays - Tacos,
Tuesday- Crispy chicken cutlets
Wednesday - fish patties
Thursday - dairy lasagna
Sunday - Shabbat leftover and grilled hotdogs
I also had things to make a quick sandwich in case

Oh he does a lot of the time. And he doesn't have a attitude about it. He eats what I give him most of the time, but I can see that he doesn't like it as much. I like to make him happy:)

If you're into meal prep subscriptions, I use Prep+Rally.. I get the menu on the Wednesday before for the upcoming week and prep on Sunday for everything. I find that it changes things up so we're not having the same few suppers all the time.

Prep 2-3 proteins with plans to make 2 meals from each, to last the week.
Same for side dishes.
Roast chicken. Shnitzel. Meatballs.
Sweet potato fries. Pasta.
Buy some breads like pita and baguettes.

1a. Roast "rotisserie" chicken for Sunday dinner. Side dish of sweet potato fries.
1b. Up ⬆️ Shred leftovers for chicken tacos.
2a. Grill chicken breasts or baked shnitzel - warm and stuff into baguettes with all the fixings.
2b. ⬆️ Slice cold leftovers over lettuce salad one night along with remaining roasted sweet potato.
3a. Bake meatballs. Add to simmering sauce. Side of pasta.
3b. ⬆️ Serve meatballs stuffed into pita along with Israeli salad and tehini, similar to falafel and delicious.
Use parve pasta to make a dairy dish.
You get the idea.

I have been making this for years - one of my favorite tried and true.
I generally use boneless skinless chicken thighs.
This is essentially one dish because onions, tomatoes, pepper are really a vegetable although I do augment with a crisp green salad
Barley is also a very nutritious carb
SMOTHERED CHICKEN WITH BARLEY
INGREDIENTS
1 teaspoon ground cumin
3⁄4 teaspoon chili powder
1⁄2 teaspoon salt
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon dried mint flakes
1⁄8 teaspoon garlic powder
1⁄8 teaspoon red pepper flakes
6 chicken thighs
1⁄2 teaspoon canola oil cooking spray
1 1⁄2 cups chopped onions
1 cup chopped red bell pepper
1 tablespoon soy sauce
3 1⁄2 cups chicken broth
1 1⁄4 cups uncooked pearl barley
1 (14 1/2 ounce) can diced tomatoes, drained
6 tablespoons chopped green onions
DIRECTIONS
Combine first 7 ingredients in small bowl, rub chicken with half of spice mixture.
Heat oil in large nonstick skillet coated with cooking spray over med-high heat. Add chicken, cook 1 min on each side or until browned. Remove from pan.
Recoat skillet with spray, add chopped onion, bell pepper, and soy sauce. Cook over med-high heat 3 minutes until vegetables are lightly browned.
Add broth, barley, tomatoes, and remaining spice mixture. Stir well.
Add chicken to skillet, nestling thighs into vegetable mixture.
Bring to boil, cover, reduce heat, and simmer 55 minutes or until chicken is done.
Let stand 15 minutes.
Sprinkle with green onions.

I do all of the above- we usually have 2 types of breaded chicken for 2 different suppers through out the week (cornflake schnitzel, pretzel crumb schnitzel, Dorito coated chicken) also sometimes I bread chicken on the bone. So I bread those on Sunday and freeze. I make meatballs and freeze (I make 2-3 batches at once). I make a meat soup and freeze (usually a few batches at once). I also make lasagna and freeze. I make lots of soups and freeze.
Some suppers I make take very little time, so I do on the spot. Like everything bagel Salmon (I pour honey mustard on salmon and then everything bagel seasoning, I bake 20 min covered, and 15 min uncovered).
For sides I also only do very easy:
Sweet potato fries, regular fries, cut up potatoes or sweet potatoes, roasted broccoli or cauliflower, soup that I froze, a salad or cut up veggies. Rice that I dump into our rice maker...
