I'm trying to plan my menu for the first days.
Does anyone have any suggestions of dishes that are easy to make?
I have a hard time fasting on Yom Kippur and it takes me a few days after fasting to get my energy back! With all the laundry that needs to be done, I'm finding that I don't have enough strength to make an elaborate menu as well!

Sweet potato pie
(just mash up boiled sweet potatoes, add brown sugar, margarine, vanilla, eggs, and corn syrup)
Corn kugel
(easy recipe in KBD)
roasted chicken
(lemon juice, olive oil, and herbs)
lukshen kugel
(noodles, margarine, sugar (I use splenda), vanilla, brown sugar)
deli roll
Shepherd's pie
tacos
chicken/pastrami/mashed potato casserole

You don't have to fuss. Sometimes it doesn't pay to cook in advance; some things can be made on yomtov easily if your oven or gas stove is left on, or on a timer.
Gef fish is easily baked plain or with tomato sauce.
Chicken can be baked plain or with any bought sauce; put on the bottom of the pan raw rice or cut up potatoes (sweet, red or plain white).
You don't need dessert; if you want to bake, a cake mix is easy and usually has variations on the box. You can cut up melons on yomtov, too.
Drinks can be bought or mixed from a powder.
Do you have a neighbor to "trade" with - say, you make the soup and she makes the kugel and then you trade half of each? That would work...

here's an easy dessert that always looks/tastes amazing and super quick and simple
Strawberry Shortcake
buy bakery sponge cake or pound cake.
strawberrys-fresh or frozen in sauce
whip up one dessert whip
on yom tov, can cut slice of cake, put on whip and strawberrys and layer .
wallah and yum!!

I always make beef stew for sukkos - it's warm, it's one pot, and you can leave it in the over for hours. farfel (to soak up the gravy), broccoli kugel, and voila - a meal!

I was thinking of roasting different vegetables- sweet potatotes, butternut squash, and regular potaotes together. Nice and easy.
Any easy salmon ideas, to be served cold shabbos day?. Not pickeled.

my mother marinates the salmon in italian dressing..my sister also makes it and cuts it up cold for a salad...

Do you have neighbors or friends locally? We trade side dishes and suddenly, your fridge is full! All I made for Rosh Hashana was 1 batch of sweet potato flowers and gave to everybody some, and I got an apple kugel, doughless potato knishes, you get the picture?
