Purple Cabbage Salad

This is one of my favorite cabbage salad recipes:

1 bag of coleslaw
Some purple cabbage
3 scallions sliced
1/2 C dried cranberries or cherries
1/2 C slivered almonds
1 7 oz can chow mein noodles

1/2 C oil
3/4 C sugar (I use 1/2 c)
1/3 C vinegar
1/4 C water
salt and pepper to taste

dress salad 1/2 hr before serving.

I love this recipe. Every time I make it I'm asked for the recipe.
I make it with glazed pecans and it is delicious.
I use sliced red and yellow peppers and scallions to give it some more color.

I also use garlic onion croutons (the small ones) and it adds so much to the taste.

At the last wedding I attended, there was a purple cabbage salad with diced apples ( I think they were green apples) in it. if I'm not mistaken, slivered carrots too. I don't know what kind of dressing though. the overall taste was sweet. anyone know what I'm referring to?

how would the dressing taste if I made it with splenda? did anyone ever try splenda in this salad or any other salad dressing?

I always use splenda when making salad dressing- comes out delicious.

200 grams chopped green cabbage
200 grams chopped purple cabbage
2 medium carrots shredded
4 scallions chopped
50 grams sesame (optional), toasted
100 grams sunflower seeds (optional), toasted

dressing:

1/4 cup vinegar
1/4 oil
1/2 cup sugar
1/2 teaspoon salt

2. Purple cabbage salad

200 grams purple cabbage shredded
2 scallions
1/4 cup sesame, slightly roasted
1/4 cup blanched almonds, slightly roasted

dressing:
1/4 cup olive oil
1/4 cup vinegar
1/2 tsp. salt
1 tablespoon sugar

Both these recipes are from the Hebrew cookbook: Arucha Lechol Arucha (ערוכה לכל ארוחה) by Shifra Abalkush. Great cookbook. Easy peasy recipes without fancy ingredients!
