Re what Yehudis did, do you have cheesy foods?

Do you eat cheesy foods on Chanuka?
We never did before but my husband mentioned the other day that its a minhag not just to have oily foods but also cheesy foods.

I don't really like cheese products that are healthy so the pizza/calzones/pasta dishes are all very fattening. Maybe I'll make a dietetic eggplant parm for supper on sunday.

there is a recipe in spice and spirit for cheese latkes. I tried them the other day and they were pretty yummy but nothing compares to the regular shredded potato latkes.

yes, we eat dairy l'kovod yehudis/chanuka. tonight we had lasagne. the other night mac and cheese.

here is another question ... is the inyan to davka fry foods in OLIVE oil (for the chanuka nes) or can it be any oil?

my husband always says I'm supposed to use olive oil but I refuse.
a) its not healthy to cook with olive oil
b) it stinks and tastes funny.

The other night he commented that the vegy sallad was more chanukaish then the latkes.

so why did I bother? just to gain a few pounds? Rolling Eyes

I heard just the opposite, that olive oil was the healthiest oil to cook in! LOL

Olive oil is a nusaince to deep fry with because it smokes at a very low temperature, so you have to keep the heat even. I shallow fry everything, and I use olive oil for savory dishes. I fry my sufganiyot in canola oil.

Thats what I heard also. Thats why middle eastern diets are so healthy despite all the oil they use because they only use olive oil.

We always had cheese blintzes one night of Chanuka as kids.
I always did it until this year, when things are so crazy (BH) and the thought of standing and making blintzes for thirty people is too tiring for me.
I already am making an average of 100 donuts a day (300 yesterday for our big party).

I make these every chanukah - they are so easy, and plenty of times during the year

olive oil is supposed to be very healthy on things not heated. But when heated it breaks down in an unhealthy way that canola doesn't. So canola for cooking and extra virgin olive oil for salads. that's what I have heard. don't know if I'm correct.

I make it so often, I know it by heart!
3 eggs
1 c. cottage cheese
1 1/2 c. flour (I sub some w/ whole wheat)
1 c. milk
1 tsp. baking powder
sugar (I like to use brown sugar)
1 tsp. vanilla

mix and fry
LA did I miss anything? I simply don't feel like pulling out the cook book from the top shelf

I made cheese latkes tonight.

7 tbsp flour
6 tbsp sugar
6 eggs
1 lb farmer cheese
1 tsp vanilla sugar

mix well and fry!

I make 1/2 the recipe usually. It yielded about 10 small latkes.
