any ideas for a vegetable besides for string beans for friday night that goes well on the blech. ie does not dry out or anything like that.

I make cauliflower puree sometimes, steam 2 heads cauliflower, puree with immersion blender, add a large fried onion, salt and pepper.

Roasted veggie - cut up peppers, red onion, garlic, green and yello zucchini, big mushrooms and eggplant if you like. Spray with pam, sprinkle salt, pepper, oonion and garlic powder, mix and spray again. COok at 350 till tender.

You can make potato bourekas. Bake it before hand and keep it on the bleck, you can make some mushroom sauce and keep that on a small bekelah onthe blech as well

I make something similar, but with olive oil, salt and pepper on any veggies you like. cover and bake for a couple of hours, till soft and tender. (I keep the oven temp down at 300 after the first 40 min)

I also make some thing similar but I serve it shabbat morning.
I slice tons of veggies into largish chunks- zucchinis, peppers, thinly sliced sweet potatos, mushrooms, eggplant, quarters of an onion, sometimes cherry tomatoes.
Add olive oil, salt, pepper, whole pierced cloves of half a head of garlic, rosemarry or thyme (fresh) and bake for about 30 min uncovered until tender.
Comes out great.

stir fry veggies (peppers, carrot, cauliflower, green beans, zucchinni whatever you like)
green beans with almonds
green beans with mushrooms
carrots
zucchini and tomato
grilled pepper is so good.

I usually steam broccoli and we eat it at room temp. It gets overdone if you try to keep it warm.
Also peas, steamed cauliflower or asparagus.

This one I really love.
fry in a little oil Leek
add cut carrots ,after the Leek fryed
let it simmer in its own juice till carrots are tender,its absolutely delicious and slimming.
keep on blech for friday night
not nice shabbos morning
