I make this without the breadcrumbs and my guests inhale them.
The trick is to make very small meatballs. I usually do half ground meat and half ground chicken.

Potato starch will make them dry. Use grated raw potato. You need about 1 medium potato for a lb of meat. Shred with s blade in food processor r on finest shredder of box grater one medium potato and one small onion to every lb of meat. Add one egg for every 1 1/2 lbs of meat.

Liebers had a cookbook this year with meatballs that contain 2 lbs meat, 1/2 cup potato starch, and 1 egg, in addition to a lot of spices.
