Fridge or freezer? You don't HAVE TO, but some people do it because of bugs. Myself, I just keep everything in airtight (and bug-proof) containers.

I also keep the spices in the refrigerator as my husband is Israeli. But I do believe that it keeps the smell stronger and tastes better.

you don't have to but it will preserve the flavor longer. Me, I can't afford the space in the fridge. I need it for things like chicken and cottage cheese. You know, candidates for food poisoning. I keep my spices, like everything else, tightly closed when not in use.

If you're concerned about bug eggs that may have been laid in the spices and could hatch at room temp, put the spices in the freezer for a few days to kill the eggs before opening the package.

With the heat in Israel in the summer, I'd opt to keep it in the fridge. But I've been told that in general, paprika should be kept in the fridge because it can get infested with bugs.

Here the rov says NOT to freeze spices; that the moisture encourages bugs.

I guess with any kashrut issues, consult your own Rov. Opinions vary.

I keep my spices out in the open, in a spice rack, but I have heard that they keep better in the fridge.
