Please post a good vegetable egg roll recipe. Would like to make for yom tov.
Also any suggestions/experience with freezing egg rolls?

What I do is sautee a bag of cabbage with tons of scallions, esp the green part, for color. If you want to make it flieshig, add pastrami/corned beef, but just cabbage is also really good.
In the produce section in most large grocery stores they have egg roll wrappers, and I roll it in them, and pan fry it for like a minute on both sides. Once ready I drizzle duck sauce over them..HUGE HIT!
I dont recommend rolling it in the wrapper in advance, mine spoiled from like tuesday (the day be4 yomtov) to friday when I wanted to serve it, I realized that cabbage spoils pretty easily.
Freezing them already rolled might work, but im not so sure.
