Shim-in is the 'boro parky' pronounciation.that's the accent, not the pronounciation. In williamsburg we say someething that sounds like
"Shim-hn" -or "Shimern" (if you remove the R). put a lowercase e in there. I cant explain.

Chassidim come from all over Europe - polish chassidim are going to have a different pronunciation from the assorted russian chassidim from the hungarian chassidim.
Shimin is probably the closest to what you're asking for.

I've only heard Shimin among chassidim. But like Mama-Bear wrote, there is no emphasis on the "I" of "in" but it rather gets slurred.
Sheem-own is very proper Israeli. Emphasis on second syllable.
Shim-own is very slang Israeli. Emphasis on the first syllable.

Our Shimon is only called Shimmy (even in business), but when he needs to give his full name for some purpose, he always pronounces it Shim-own with the accent on the second syllable (we are not chassidish though).

My grandfather (chassidish raised) says shi-mohn. That's the name of one of his brothers.

Our Israeli son is SHEEMohn or SHEEmee to Israelis, and SHImee to English speakers. I'd think the Chassidish pronunciation would be SHIMin.
