Can I freeze these things?

Please help...

Which of the following things, if any, freeze well:

Cooked rice
Raw carrots
Cooked carrots
Cooked eggplant
Raw onion
Fried onion
Cooked oatmeal
Tuna salad
Egg salad
Guacamole
Stir-fried vegetables

I would not freeze:

Tuna salad

cooked rice
raw carrots.
cooked eggplant
sauted onions
these things freeze very well!!

cooked carrots may become mushy when defrosted

as for the other things I never really trying.

IMO, frozen raw carrots are GROSS!!

I have a friend who freezes guacamole all the time and says its fine - never tried it myself though...
She also makes babaganoush and freezes it, but its not raw eggplant. Maybe stir-fry it first and then freeze.

Stir fried veggies are great
so are:
cooked carrots
fried onions
cooked rice - do it all the time
cooked eggplant
cooked oatmeal - I saw a recipe once that used frozen cooked oatmeal .Why not give it a shot?

In addition to what Liba said, I don't think frozen oatmeal would work - It's not even good an hour later, let alone refrigerated or frozen. If someone did try it and it worked I'm curious to hear how they did it.

Sometimes I add cooked and cooled oatmeal to a bread that I make. I don't see why you can't freeze it first - you're not looking for the taste, after all. or in pancakes, etc.

You're not supposed to freeze cooked rice. Something about spores? I don't know. I looked on Google a while ago and it said no everywhere.

Cooked rice : have frozen it and none were any wiser

Raw carrots : You can buy frozen baby carrots, so maybe but never tried it

Cooked carrots : I freeze them mashed for baby food

Cooked eggplant : fried, breaded, any way I have tried it, it was good

Raw onion : Never tried, don't know

Fried onion : works great

Cooked oatmeal : ????

Tuna salad :NO

Egg salad : NO Guacamole No
Stir-fried vegetables no

OK, I didn't realize that it's for a recipe. I was just thinking of hardened congealed oatmeal for breakfast.

There are halachic issues with freezing cut up onions. Fried is ok though because they are cooked.

Why? Do you have thesea nd need to use them up? Or are thinking about prepping ahead of time?

Cooked rice -- never liked how it comes out defrosted, but I guess okay for a fried rice dish
Raw carrots -- yuck, unless you plan to cook. Even if you do, peel first, because it's imppossible to peel a defrosted carrot
Cooked carrots -- yes, but it does change hte texture -- becomes sort of chewy instead of crisp
Cooked eggplant -- don't know
Raw onion -- don't know
Fried onion -- yes, but not if you want crispy. Fine for stir fries or tacos
Cooked oatmeal -- don't know
Tuna salad -- don't know about freezing and defrosting. When I have a ton of tuna salad left from a simcha, I make into tuna patties (baked or fried) and freeze those -- they freeze really well
Egg salad -- wouldn't think so but don't know
Guacamole -- surprisingly, it freezes and defrosts quite well.
Stir-fried vegetables -- yes, but again, will come out chewier and not crispy.

Rice is good frozen, but add a little water when you are heating it up.

In general, anything with a mayo base does NOT freeze well.

Raw onions is a halachic issue unless you leave some of the skin or root still attached or make them into a mixture. I have done both successfully (as well as sauteed).

Guacamole is fine frozen, but the less air inside, the better.

They are actuallt somewhat cooked before they freeze them, just like all the other frozen veggies.
