One chicken soup, three variations
From Women’s Day
Use your standard recipe of chicken soup.
Use (leftovers) for:
Southwestern Style
For 8 cups, add 14 1/2 oz can of diced tomatoes, ½ cup cilantro, 1 T lime juice and 1 tsp cumin; top with roasted pumpkin seeds and crumbled tortilla chips
Italian Style
For 8 cups, add 19 oz white beans, 2 diced tomatoes and 2 T pesto ; top with croutons
Asian Style
For 8 cups, add 8 oz sliced water chestnuts, 1/3 cup cut up scallions, 1 T soy sauce, 1 tsp ginger; top with rice crackers and/or chopped peanuts
