Does someone have a good recipe of chocolate, apple or any cake that have matzo meal in it,please? thank you in advance and hatzlach in your preparations!

Giant Zebra Fudge Cookies

1/2 cup oil
2 cups sugar
2 cups matza meal
1 cup cocoa
4 large eggs
1 tsp vanilla extract
2 tsp baking powder
confectioners’ sugar, sifted

In the bowl of an electric stand mixer, mix oil, sugar, matzo meal, cocoa powder, eggs, vanilla, and baking powder until a soft dough forms. Roll the dough into 18 balls slightly larger than golf balls.

Fill a small bowl with confectioner’s sugar and stir with a fork to break up any clumps. Lower balls, one at a time, into confectioners’ sugar and toss to coat heavily and completely. Transfer to two large cookie sheets lined with parchment paper. Leave room between dough balls, as cookies spread during baking.

Bake for 18 minutes in oven preheated to 350.

If you like, you can make smaller cookies; form walnut-sized balls and bake for 12 minutes.

Cool completely.

ETA: Confectioner's sugar fpr Passover
To make 1 cup Passover confectioner's sugar, combine 1 cup minus 1 Tbsp sugar, with 1 Tbsp potato starch. Pulse in food processor or blender.

There's also a recipe for best ever sponge cake which calls for mazta cake meal and potato starch.
And chocolate chip biscotti which calls for margarine, matza cake meal and some potato starch.

ETA: Margarine Substitute
Try this easy replacement for margarine on Passover. Place the desired amount of cottonseed oil in the freezer for 2-3 hours. It will solidify and take on the consistancy of soft margarine. You can use it straight from the freezer, and will will work well in many recipes.

Chocolate Apple Nut Cake


6 eggs separated
1 1/2 cups sugar
1 cup chopped walnuts
1/2 cup matza meal
4 ounces grated chocolate
2 apples peeled and grated

Mix egg yolks and sugar. Whip egg whites til stiff.
Add other ingredients to sugar mixture. Fold in eggs whites.
Bake about 1 hour at 350.

I've been making this for years and it's enjoyed by all.

Here is a recipe for double chocolate biscotti (really good)

3/4 cup/s Oil
2/3 cup/s Sugar
1/2 cup/s Brown Sugar
1 tablespoon/s Vanilla Sugar
1/4 cup/s Cocoa
3 Eggs
2 tablespoon/s Brewed Coffee
1 pinch/es Salt
1 1/4 cup/s Matza Cake Meal
1/4 cup/s Matza Meal
2 tablespoon/s Potato Starch
1/4 cup/s Ground Walnuts
3/4 cup/s Chocolate Chips

Preparation
Preheat oven to 350F. Grease a loaf pan. Whisk the oil, sugars, vanilla and cocoa together. Stir in the eggs, then coffee, salt, matza meal, potato starch and matza cake meal. Fold in the chips and nuts. Spoon batter into pan and bake until top is set about 35 mintues. Wrap in foil and refrigerate a couple of hours. Reduce oven temperature to 325F and take out loaf and cut into slices. Place on baking paper lined cookie sheet. Bake another 15-20 minutes turning half way through.

Best-Ever Sponge Cale

2 large lemons
9 large eggs, separated
2 cups sugar
1/4 cup club soda
1/2 cup potato starch
1/2 cup matza cake meal

Zest 2 Tbsp of lemon peel from the lemons, making sure to only get the yellow part, not the bitter white pith. Set aside. Cut the lemons and squeeze 1/4 cup of lemon juice. Set aside.

Beat the egg whites until stiff; set aside.

In a separate bowl, beat the egg yolks, sugar, club soda, and reserved lemon juice for 3 minutes on medium-high speed. Gradually add in the potato starch and matza cake meal.

Using a rubber spatula, fold the whites into the egg yolk mixture. Add the lemon zest. Beat for 2 minutes. Pour into ungreased tube pan. Bake for 1 hour and 10 minutes in oven preheated to 350. Invert until cooled completely cool. Run a knife around the cake and remove from pan.

Pesach Nut Cake
 
6 egg yolks
1 ¼ c. sugar
¼ c. oil
¾ c. matza meal
¾ c. potato starch
pinch salt
1 c. OJ
1 tbsp orange zest
1 tsp vanilla
1 ½ c. ground walnuts, almonds or filberts
6 egg whites beaten stiff
 
 
Preheat oven to 300. Beat egg whites with ¼ c. sugar. Cream yolks and sugar. Add oil and beat. Add flours alternately with OJ and flavorings until combined. Fold in nuts. Fold in whites very gently. Pour into tube pan. Bake for 1 hour or until point of knife comes out clean. Invert and cool.
You can make it non-Pesach by substituting flour for potato starch.

This is my family's FAVORITE Pesach cake. We make it at least 2-3 times each Pesach.
