hmmmm, based on your screen name, how about kugel? Wink

- A boneless chicken breast stuffed with something and rolled up and baked with white wine and dijon mustard
- glazed carrots or steamed baby carrots and sugar snap peas tossed with olive oil/lemon juice/ poppy seeds
- wild rice pilaf with craisins and toasted slivered almonds on top
- roast beets in the oven and then slice them, place one on a plate and then pipe mashed sweet potatoes on top, put another slice of beets on top standing up
- is the fruit for dessert? You could try fondue or fruit kebobs with a lime/poppy dressing, or fruit cups with sprinkled coconut...

I have a great recipe for steak and mushrooms that I make for simchas. It is delicious and it freezes well.

10 slices Steak
5 Large Onions Sliced
2 box Cremini Mushrooms Sliced
2 box Portobello Mushrooms Sliced
1 tablespoon/s Oil

Preparation
Using a large frying pan (with a lid) put 1-2 tablespoons of oil in the pan. Layer steak with a little salt, pepper and garlic powder, then onions to cover then mushrooms. Continue layering until all the steak is used up. It is ok if the cover doesnt fit right away it will once the steaks start cooking. Cover the pan and put on a VERY low flame (very important) and let cook for about 3 hours.

Firstly, how many people are you having, and secondly are you serving plated or buffet style? I'd do two mains if budget allows--one chicken and another red meat, not everyone eats red meat.

Chicken: BBQ chicken, if you want fancy you can do mini kebabs. Chicken stir-fry, lemon chicken with mango. Or chicken curry that goes nicely with rice. If the weather is hot you can do nice chicken salad in a lettuce cup.

Red meat: meatballs in tomato sauce or in mushroom sauce (it's quite cost effective). Brisket (can be prepared in advance, sliced. Just heat up in gravy). Roast beef would be treat though more expensive. Stuffed courgettes or mushroom cap stuffed with meatball(can mix beef/turkey or lamb/turkey). Or meat lasagna if you're having a crowd and doing buffet.

Whole salmon can be very elegant and very inexpensive depending on where you get your fish. I like my local vietnamese store where the fish is fresher and the price is half what it is in the grocery store.
