Soups, chopped liver, salad dressings, occasionally for tuna fish when the kids request the smooth type...tons more that I can't remember.

I use it at least 3x per week - it's a staple here! I have a dairy one and a meat one and I'm strongly considering getting a pareve one too.

Everything ra mom said and more. I don't think I've prepared a shabbat without one since I got one!
Soups
Dips
cake batters (I have a whip attachment)
Egg whites beaten
dressings

I just never take out my hand beaters anymore nor the food processor. It is so easy to clean!

Sometimes it does splash if I use the whip attachment. I hold my hand out to protect it from splashing everywhere but my hand. Otherwise, mine came with a tall measuring cup that doesn't splash and is good for dips, etc when I use the blender part. I only use it for pareve.

Keep the blender immersed in the soup/liquid/whatever you are blending.
If it is covered by the food, it won't splash.

For sou this makes sense but people use it for other things, how do they keep it from making a huge mess.

If I'm doing tomato dip, I will press the tomatoes down very strongly with the immersion blender, and just pulse the blender until it all starts to blend together. Once it starts to blend, I can hold down the button fully, and it blends easily submerged in the liquid.

I use it for Herbalife protein drinks. No, it does not splash if cup is deep enough.

I use it pretty much for what ra-mom uses it for. I have never made cheesecakes or mayo with it, however.

I use mine all the time...to blend dips (dill dip), dressings, also to blend soups that are chunky when I want them to be more smooth, those are what I can think of at the top of my head but I def use mine a lot. And also mine never splashes, you just put it straight into the food straight down, not at an angle and it doesn't splash.

make sure that the blender is completely immersed in the liquid (so that you don't see the rounded bottom)

happy18, if you're asking meat or dairy, I have the same problem. I bought one a while ago, but never used it because I can't decide. All the above suggestions are nice - but a lot of them are dairy and many others need to be served with meat meals. Maybe I'll go buy a second one.

I just used it twice and actually borrowed it from a neighbor. I made zucchini soup erev tisha ba'av and cheese blintzes on tisha ba'av. I used the blender for the crepe and cheese mixture. I'm seriously thinking of investing in 2. Milchige and fleishig.

Soups and sauces primarily. I do have a regular blender as well, which gives a smoother texture IME.

I used to have a Braun multiquick, which had a whip and chopper, but Braun stopped selling them in the USA, so I couldn't get one here. Sad
